Ingredients for Chicken Fritters
1.5 lb (700 g) skinless, boneless chicken breast
2 medium eggs
1/3 cup (40 grams) almond flour
1 cup (110 grams) shredded mozzarella cheese
2 tbsp fresh basil finely chopped
2 tablespoons chopped chives
2 tablespoons parsley, chopped
1/2 teaspoon garlic powder
A pinch of sea salt and freshly ground black pepper or to taste
1 tablespoon olive oil or more for frying
Instructions:
Place the chicken breast on a cutting board and using a sharp knife cut it into small pieces, then place them in a large mixing bowl.
In a large bowl, whisk together the almond flour, eggs, mozzarella, basil, chives, parsley, garlic powder, salt, and pepper.

Mix well to combine.
Heat the oil in a large non-stick pan over medium heat. Scoop in the chicken mixture with an ice cream scoop or a large spoon and transfer it to the pan, then flatten slightly to make fritters.
Fry until golden brown on both sides, about 6-8 minutes. Keep in mind that you need to cook them on medium heat, otherwise they will burn on the outside but not well done on the inside.
Serve with your favorite dip.
