All love that this recipe is fast and easy to make and makes everyone in the family full and happy. I also love that I’m getting some yummy fresh fruit in their bodies, too.
The kids always get a kick when they hear that we’re having tacos for breakfast and it just makes them that much more excited to eat and join in on the tasty fun

Pancake Fruit Tacos Ingredients
Pancakes
- 1 cup all-purpose flour
- 1 tbsp sugar
- 2 tsp baking powder
- 1/8 tsp salt
- 1 1/4 cups plant-based milk (or regular milk)
- 2 tbsp applesauce (or 1 egg if not vegan)
- 1 tsp vanilla
- Oil or butter for the pan
Taco fillings
- 1 cup yogurt (plant-based if vegan)
- 1 cup blueberries
- 1 cup raspberries
- 1 cup strawberries, halved/sliced
Chocolate drizzle
- 1/4 cup chocolate chips or 1 small chocolate bar, chopped
Step-by-step Guide
1) Make the pancake batter
- In a bowl, whisk flour, sugar, baking powder, salt.
- Add milk, applesauce, vanilla. Mix until just combined (don’t overmix).
- Rest batter 2–3 minutes while the pan heats (optional, but helps).
2) Cook mini pancakes
- Heat a nonstick pan on medium-low. Lightly oil it.
- Pour small pancakes (about 1/4 cup batter each for taco-size).
- Cook until you see bubbles and the edges look set, about 30–60 seconds.
- Flip and cook the other side 30–60 seconds until golden.
3) Fold into “taco shells”
- While pancakes are still warm, gently fold each pancake in half.
- If they flatten, rest them in a muffin tin or between two cups for 2 minutes to “hold” the taco shape.
4) Melt the chocolate
- Microwave chocolate 30 seconds at a time, stirring each time, until smooth.
5) Assemble the tacos
- Spread a spoon of yogurt inside each folded pancake.
- Add fruit (berries + strawberries).
- Drizzle with melted chocolate.
Serve right away.
Quick tips
- No time? Use frozen pancakes/waffles and just assemble.
- Use any fruit you like: banana, kiwi, blackberries, apples, etc.
- For extra flavor: add cinnamon to batter, or a little honey/maple over yogurt.
